How do we move green protein products from promising innovations to solutions that work in everyday public meals? Join this Mission Exchange to explore what producers, professional kitchens, educators and projects have learned about testing, adapting and implementing green proteins – and what it takes to accelerate wider adoption.
Developing innovative green protein products is only part of the transition towards more plant-rich public meals. To become part of everyday practice, products must meet the needs of professional kitchens, work in existing workflows and appeal to the people eating the meals. Product limitations, skills gaps and scepticism can all stand in the way of wider adoption.
Building on experiences from the project, 4P – Plant Powered Public Plates, this Mission Exchange brings together actors to share what they have learned from moving green proteins from development and testing towards implementation. We will explore experiences from producers, professional kitchens and educators, including what has worked, what has proved difficult and where knowledge is still missing.
The day is for food producers, professional kitchens, educators, project partners and others working with plant-rich public meals. Through presentations, shared experiences and facilitated discussion, we will identify recurring barriers and explore what different actors can learn from each other to make green protein solutions easier to test, improve and implement.
By joining the Mission Exchange, you will:
- Gain practical insights from developing, testing and introducing green protein products in public meals.
- Learn where product limitations, kitchen practices, skills and perceptions can hinder adoption.
- Hear perspectives from producers, professional kitchens and educators.
- Exchange experiences with others working on similar challenges across the food value chain.
- Explore opportunities for collaboration that can support wider implementation.
